Oriental Sesame Beans

Ingredients

  • 3 lbs green beans ends removed

Sauce Ingredients

  • 1 Tbsp sesame seeds
  • β…“ cup red wine vinegar
  • β…“ cup soy sauce
  • β…“ cup sesame oil (oriental)
  • 1 Tbsp prepared mustard (hot, such as Dijon)
  • 2 tsp sugar
  • 2 tsp garlic smashed
  • ΒΌ cup green onions (scallions) finely chopped

Garnish (optional)

  • red or yellow pepper diced

Instructions

  • Blend together the sesame seeds, red wine vinegar, soy sauce, oriental sesame oil, mustard, and sugar
  • Add the smashed garlic, and finely chopped green onions
  • Cook the beans very briefly, and drain. Plunge into ice water to stop cooking.
  • Pour sauce over the beans.
  • If desired, decorate with a diced red or yellow pepper.
