Black Bean and Corn Salsa

Ingredients

  • 2 cups corn
  • 1 cup red pepper diced small
  • ½ cup green onions (scallions) thinly sliced
  • ½ cup chopped cilantro
  • 14.5 oz can black beans rinsed and drained

Sauce

  • ½ cup red wine vinegar
  • 1 tsp sugar
  • 2 tsp extra virgin olive oil
  • ½ tsp garlic powder
  • ½ tsp ground cumin
  • ½ tsp chilli powder
  • ½ tsp black pepper
  • dash salt

Instructions

  • Mix main ingredients together.
  • Mix sauce ingredients together in a small bowl, and pour over main ingredients. Let sit.
  • Serve with corn chips, etc.
