Bacon Cheese Jalapeño Quick Bread

Ingredients

  • 12-14 slices of quality cooked bacon such as applewood smoked, crumbled
  • 3 cups flour
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 4 oz cream cheese at room temperature
  • 2 cups shredded cheese (mix of favorite cheeses such as Monterey Jack and sharp cheddar, freshly grated parmesan, mozzarella, etc.)
  • 2 diced jalapeños seeds removed
  • 2 thinly sliced scallions optional
  • 1 egg
  • cups whole milk
  • 1 tablespoon melted butter

Instructions

  • Preheat oven to 350 degrees.
  • Grease a 9 x 5 or 9 x 6 loaf pan.
  • Cook your bacon until it is nice and crisp. Remove from pan and place on a paper towel to remove excess grease. Allow the bacon to cool and then crumble it.
  • Whisk the flour, salt, baking powder, and sugar together in a small bowl. Set aside.
  • Mix the cream cheese, shredded cheese(s), jalapeños, scallions, and bacon in a large bowl until evenly combined.
  • Add your flour mixture to the cheese mixture along with the egg, milk, and melted butter. Mix just until combined.
  • Add to your greased loaf pan and bake for 45-50 minutes or until a toothpick inserted comes out mostly dry.
