Bryan’s Favorite Lentil Soup
Some years ago, we were invited to a friend's house for dinner, and she served this soup. I was enthusiastic about it, so she sent me the recipe, and called it "Bryan's Favorite Lentil Soup".(Note: We tried adding kale to this recipe, and it turned out well, too. Adding celery could also be a good addition.)
Servings: 4 bowls
Ingredients
- 2 large Spanish onions diced
- 2 carrots diced
- 1 lb lentils
- 2 tsp. ginger root grated or minced
- 1 tsp. ground cardamon
- 1 tsp. ground coriander
- Garlic to taste
- Salt to taste
- Juice of one lemon
- 1 Tbsp. sugar
- Water
Instructions
- Brown the onions.
- Add and brown the ginger, cardamon, coriander, and garlic.
- Add the carrots and lentils and some water. Simmer for about 1 hour.
- Mash (perhaps with an immersion blender) Add salt, lemon juice, and sugar; adjust to taste and add water as needed. Let sit for at least an hour.
