Tom Yum Soup (Thai Soup)
A slight variation on Tom Yum Soup
Ingredients
- 2 cartons chicken broth
- 1 can coconut milk
- 8 oz sliced mushrooms
- 8 oz spinach
- 1 sliced onion
- shredded carrots
- 1 summer squash diced
- 1 zucchini diced
- ⅓ tube lemongrass
- 2 Tbsp diced garlic
- 2-5 Tbsp Thai curry paste (according to taste)
- fish sauce
- coconut aminos
- shredded chicken pre-cooked in oven with ground ginger, garlic powder, onion powder, salt and pepper (or other protein such as shrimp)
Instructions
- Place all ingredients in a slow cooker. Heat on high for about 2 hours, then low for another 2 hours.Or place the ingredients in a saucepan. Since the chicken is already cooked, just bring to boil until the vegetables are done to your liking, about 20 minutes
