Tom Yum Soup (Thai Soup)

A slight variation on Tom Yum Soup

Ingredients

  • 2 cartons chicken broth
  • 1 can coconut milk
  • 8 oz sliced mushrooms
  • 8 oz spinach
  • 1 sliced onion
  • shredded carrots
  • 1 summer squash diced
  • 1 zucchini diced
  • tube lemongrass
  • 2 Tbsp diced garlic
  • 2-5 Tbsp Thai curry paste (according to taste)
  • fish sauce
  • coconut aminos
  • shredded chicken pre-cooked in oven with ground ginger, garlic powder, onion powder, salt and pepper (or other protein such as shrimp)

Instructions

  • Place all ingredients in a slow cooker. Heat on high for about 2 hours, then low for another 2 hours.
    Or place the ingredients in a saucepan. Since the chicken is already cooked, just bring to boil until the vegetables are done to your liking, about 20 minutes
