Gazpacho

Ingredients
- 1 clove garlic
- 4 ripe tomatoes quartered
- ½ green pepper seeded and sliced
- ½ small onion peeled and sliced
- 1 cucumber peeled and coarsely sliced
- 1 tsp salt
- ¼ tsp pepper
- 2 Tbsp olive oil
- 3 Tbsp wine vinegar
- ½ cup ice water
Instructions
- Fill container to top with the ingredients
- Cover and blend on high speed for 2 to 3 seconds only, or until vegetables are coarsely chopped.
- Chill or pour into serving plates and serve with an ice cube in the center of each serving
