Ingredients

  • 1 clove garlic
  • 4 ripe tomatoes quartered
  • ½ green pepper seeded and sliced
  • ½ small onion peeled and sliced
  • 1 cucumber peeled and coarsely sliced
  • 1 tsp salt
  • ¼ tsp pepper
  • 2 Tbsp olive oil
  • 3 Tbsp wine vinegar
  • ½ cup ice water

Instructions

  • Fill container to top with the ingredients
  • Cover and blend on high speed for 2 to 3 seconds only, or until vegetables are coarsely chopped.
  • Chill or pour into serving plates and serve with an ice cube in the center of each serving
