Fried Rice (White or Brown)
A quick and easy fried rice recipe.
Ingredients
- 2 cups cooked white or brown rice cooked according to package directions, and thoroughly cooled
- 1 small onion diced
- 1 stalk celery diced
- 2 Tbsp oil
- 2 cloves garlic minced
- 6 oz cooked chicken, or pork, or small shrimp diced
- 1 Tbsp soy sauce or Bragg Liquid Aminos
- shredded carrots optional
- chopped bell peppers optional
- peas optional
- 1 tsp oriental sesame oil
- 2 scallions chopped
- 2 Tbsp cilantro leaves
- salt optional
- pepper optional
Other Options:
- scrambled egg
Instructions
- In a heavy skillet, add the onion, celery and bell pepper (if using) with 1 Tbsp of oil. Sauté gently over medium heat until barely cooked and still crunchy (3 to 4 minutes). Slide these ingredients on to a plate and return the warm pan to the burner
- Add the remaining 1 Tbsp of oil to the pan and raise the heat a bit. Add the rice and begin sautéing, using a wooden spoon to scrape the bottom. Cook about five minutes.
- Let the rice get a little crusty before adding the garlic, meat, and the already cooked onion and celery (plus the carrots, peas, and egg, if using). Add the soy sauce.
- Toss well, and then season with sesame oil, scallions, and cilantro.
- Add salt and pepper, if needed, and toss well.
