Fried Rice (White or Brown)

A quick and easy fried rice recipe.

Ingredients

  • 2 cups cooked white or brown rice cooked according to package directions, and thoroughly cooled
  • 1 small onion diced
  • 1 stalk celery diced
  • 2 Tbsp oil
  • 2 cloves garlic minced
  • 6 oz cooked chicken, or pork, or small shrimp diced
  • 1 Tbsp soy sauce or Bragg Liquid Aminos
  • shredded carrots optional
  • chopped bell peppers optional
  • peas optional
  • 1 tsp oriental sesame oil
  • 2 scallions chopped
  • 2 Tbsp cilantro leaves
  • salt optional
  • pepper optional

Other Options:

  • scrambled egg

Instructions

  • In a heavy skillet, add the onion, celery and bell pepper (if using) with 1 Tbsp of oil. Sauté gently over medium heat until barely cooked and still crunchy (3 to 4 minutes). Slide these ingredients on to a plate and return the warm pan to the burner
  • Add the remaining 1 Tbsp of oil to the pan and raise the heat a bit. Add the rice and begin sautéing, using a wooden spoon to scrape the bottom. Cook about five minutes.
  • Let the rice get a little crusty before adding the garlic, meat, and the already cooked onion and celery (plus the carrots, peas, and egg, if using). Add the soy sauce.
  • Toss well, and then season with sesame oil, scallions, and cilantro.
  • Add salt and pepper, if needed, and toss well.
