Red Beet Salad

This is a beet salad recipe that "can't be beet!".

Ingredients

  • 2 bunches red beets

Marinade

  • 2 Tbsp water
  • ¼ cup vinegar
  • 1 tsp sugar
  • 2 Tbsp onion minced
  • 1 Tbsp horseradish prepared
  • ¼ tsp ground cloves
  • ½ tsp salt
  • ¼ tsp black pepper
  • 5 Tbsp vegetable oil

Instructions

  • Wash beets, trim off greens, place in a medium saucepan, and cook, without peeling, in salted water until beets are tender.
  • Peel beets, and slice.
  • Prepare marinade dressing by combining remaining ingredients. Pour over beets and let stand for several hours in refrigerator before serving. Stir beets occasionally.
