Red Beet Salad
This is a beet salad recipe that "can't be beet!".
Ingredients
- 2 bunches red beets
Marinade
- 2 Tbsp water
- ¼ cup vinegar
- 1 tsp sugar
- 2 Tbsp onion minced
- 1 Tbsp horseradish prepared
- ¼ tsp ground cloves
- ½ tsp salt
- ¼ tsp black pepper
- 5 Tbsp vegetable oil
Instructions
- Wash beets, trim off greens, place in a medium saucepan, and cook, without peeling, in salted water until beets are tender.
- Peel beets, and slice.
- Prepare marinade dressing by combining remaining ingredients. Pour over beets and let stand for several hours in refrigerator before serving. Stir beets occasionally.
