Quinoa with Toasted Almonds & Cranberries
Servings: 8 1/3 cup servings
Ingredients
- ¼ cup dry quinoa Organic Whole Grain
- ½ cup Sliced Almonds
- 1½ cups boiling water
- ½ cup cranberries dried, sweetened (Craisins)
- 1 cinnamon Stick
- 1 bay Leaf
- ½ tsp salt (optional)
Instructions
- Take the measured sliced almonds and lightly crush them in your ‘clean’ hand as you sprinkle them into a medium-large pan for toasting.
- Over medium heat, stir and toast the almonds until golden. Add the quinoa and toast a few more minutes until quinoa begins to darken.
- Transfer the toasted quinoa and almonds to a 2-quart saucepan and add the remaining ingredients.
- Bring to a boil, covered, then reduce the heat to simmer for 20 minutes.
- Remove from the heat and allow to sit for 5 minutes. Fluff gently with a fork and serve.
